Wow your guests, family and friends this Christmas with Sparkling Cranberry Cannabis & White Chocolate Cake!

The cake is incredibly moist and bursting with cranberry goodness.

The design itself is simple and elegant, and you can decorate it with anything Christmas you like!

I prefer to keep it simple, and then add a bunch of cranberries to my plate for more popping fun!

The cake is basically vanilla cake or cupcakes x 2!

And OH MY is it good! It is so moist and the flavor is comforting and yummy.

It’s easy to make – just throw it all in the mixing bowl, and throw in the cranberries when you’re done mixing.

The icing is loaded with white chocolate. I’m drooling just writing this because the icing is white chocolate ganache, cannabutter, and powdered sugar. Delicious!

  • 1/4 to 1/2 Ounce Cannabis
  • 1 cup Butter


  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.

  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.

  • Grind your dry cannabis or chop it till fine.

  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)

  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.

  • Strain your butter through a cheesecloth.

  • Cool down

  • Now you can use the Cannabis Butter (Cannabutter)

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

How To Make The Cranberries Sparkle

Making the cranberries sparkle for our cake is simple. Literally!

The cranberries sit in simple syrup overnight so they get coated and sticky.

Then they’re covered in sugar. Voila! And they look so cute!

  • 2 cups fresh cranberries
  • 1 1/2 cups sugar divided, granulated
  • 1 cup water


  • 3 1/4 cups all purpose flour
  • 2 cups sugar
  • 2 1/2 tsp baking powder
  • 1 1/2 cups Cannabutter room temp
  • 2 tbsp vanilla extract
  • 1 cup sour cream
  • 1 cup milk cow’s milk if you can
  • 3 cups fresh cranberries


  • 12 oz white chocolate chips
  • 3/4 cup heavy whipping cream
  • 3/4 cup Cannabutter room temp
  • 8 cups powdered sugar



  • Bring 1 cup sugar and water to a simmer in a saucepan. Simmer until sugar is completely dissolved.

  • Pour simple syrup into a heatproof bowl and allow to cool for about 10 minutes.

  • Add cranberries and stir to coat.

  • Refrigerate cranberries in syrup overnight, stir a couple times to coat with syrup.

  • Remove cranberries from syrup and roll in remaining 1/2 cup of sugar. You’ll need to roll them a few times to get a couple layers of sugar on them.

  • Preheat oven to 350 degrees. Prepare three 8 inch cake pans with baking spray and parchment paper in the bottom of the pans.

  • Whisk together flour, sugar and baking powder in a large mixing bowl.

  • Add cannabutter, eggs, vanilla extract, sour cream and milk and mix on medium speed just until smooth. Do not over mix.

  • Gently stir in cranberries.

  • Spread batter evenly between the three cake pans.

  • Bake 35-40 minutes, until a toothpick inserted comes out with a few crumbs.

  • Allow to cool for about 10 minutes, then remove to cooling rack to finish cooling.


  • Place white chocolate chips in a metal bowl.

  • Microwave heavy cream until it starts to boil. Remove from microwave and pour over chocolate chips.

  • Cover bowl with saran wrap for 5-7 minutes.

  • Whisk chocolate and cream until smooth.

  • Allow ganache to sit until mostly cool. It should be thick.

  • Beat the ganache with a mixer for about 2-3 minutes, until smooth and fluffy

  • Add cannabutter and beat until it is fully combined.

  • Slowly add powdered sugar and beat until it is fluffy and the right consistency. Add more cream if needed.


  • Remove cake domes from cakes with a large serrated knife.Place first layer of cake on cake plate. Spread about icing on top in an even layer.Add second layer of cake and add more icing on top in an even layerAdd final layer of cake on top and ice the outside of the cake.Top the cake with sparkling cranberries and add some around the edge, if desired.
